It's 'Thyme' for something new

VERMILION — Two entrepreneurs wanted to expand fast food options in the Vermilion area. They focused on healthier and heartier options during the rising popularity of bowl-like restaurants. In late December, Joe Jesko and Jeremy Crawford opened Bowl Thyme, in the old Burger King building, at 4855 Liberty Ave. (U.S. 6) in Vermilion. "We wanted to offer something more than burgers and sandwiches," Jesko said. "We have rice, potato, pasta and salad bowls. We also have an extended protein line." Along with their wide variety of bowls, they also serve sides, like garlic bread, and desserts, like a shake of the month. Among the benefits of moving into a former fast-food location: Jesko and Crawford could utilize its drive-thru window. When combining the popularity of bowl-type meals, and many people constantly on the go, both wanted to offer healthier meals in an efficient manner. "We felt a more fast, casual option would be kind of a good niche to get into," Jesko said. Alongside their new restaurant, they also own the Pavillion Grill in downtown Vermilion. "We love the Pavillion Grill. We put a lot into it. But we realized it's probably only going to be one of one," said Jesko, explaining that it would be difficult to recreate an establishment such as that one. Ultimately, they want to serve more than just Vermilion, expanding Bowl Thyme into a franchise. One day, they hope to serve other cities and, eventually, other states as well.
