The dish is still very flavorful and provides 10 grams of protein.Tofu Stir-FryYield 2Ingredients1 8-ounce can pineapple tidbits, 3 tablespoons juice reserved5 teaspoons rice vinegar1 tablespoon soy sauce1 tablespoon ketchup2 teaspoons brown sugar7 ounces extra-firm tofu cubed1 teaspoon cornstarch2 teaspoons canola oil1 tablespoon minced garlic2 teaspoons minced ginger1 large bell pepper, dicedDirectionsWhisk the reserved 3 tablespoons pineapple juice, vinegar, soy sauce, ketchup and sugar in a small bowl until smooth. Place tofu in a medium bowl; toss with 2 tablespoons of the sauce. Let marinate for 5 minutes. Add cornstarch to the remaining sauce and whisk until smooth.Heat 2 teaspoons oil in a large non-stick skillet over medium-high heat. Add the tofu to the skillet using a slotted spoon. Also add the bell pepper. Whisk any remaining marinade into the bowl of sauce. Stirring every 1 to 2 minutes, until tofu is golden brown and the peppers have softened.Add garlic and ginger and cook, stirring constantly, until fragrant, about 30 seconds. Pour in the sauce and cook, stirring, until thickened, about 30 seconds.
