Norwalk pizza place to permanently close

NORWALK — Gilby's Pizza Cravin — a popular Norwalk-based pizza shop formerly known as Pizza Cravin — will close its doors after four years in business. Brad Gilbert, restaurant owner, announced the decision in an emotionally charged social media post this past week, citing financial strain and the pressures of running a small business. "When I receive my food order tomorrow, it will be the last one I run — once the food runs out, I will be closing Gilby's," Gilbert wrote on Sept. 8. "The money just isn't there anymore, and it's not worth the stress and hassle. I can work a regular job and make ends meet." An announcement came shortly after Gilby's marked its fourth anniversary on Sept. 1. Gilbert reflected on the milestone and the journey since rebranding from Pizza Cravin, calling the past four years "nothing short of amazing." "I've built the Gilby's brand, and if everything works out, it will continue," the post continued. "But even if it doesn't, this decision will finally let me live and breathe again." Gilby's built a loyal following with its pizza and creative menu, earning praise from regulars and newcomers alike. News of the closure prompted an outpouring of support from customers, many sharing memories and well-wishes on social media. Gilbert concluded the message by thanking customers for their support and inviting them to place one final order. "Thank you for the great memories and an amazing time," they wrote.
