Do not use mechanical dishwasher until line has been repaired and it has been tested to verify that sanitizer is being supplied to the cycle. Use the three-compartment sink until repair is made; Violation: Repeat — Several areas of flooring in the food prep area near the cookline, in the dishwashing room, and near the three-compartment sink are chipped and missing pieces. Repair or replace tile areas in floor so they are smooth and easily cleanable; Violation: Corrected during inspection — Observed no towels or hand drying device at the handwashing sink at the waitress station. Ice build-up inside the machine was preventing the fan from turning to circulate cold air inside the unit. Repair or replace this unit.
